Comfort Food for the Win!

Baked Oatmeal

With the snow the past week, I have been craving comfort food. I've made homemade soup, french bread, zucchini bread and baked oatmeal. I have leftovers filling my fridge because I just keep cooking and baking to stay warm in my 150 year old farmhouse.

When my kids were little I was always seeking economical crowd pleasing recipes and Baked Oatmeal fit that bill! Oats are about as cheap as you can get as a food. The other plus is that it does have egg in it, offering a bit of protein. Another win as a mom!

I have since learned that they are also high in starch and cause quite a bit of inflammation in me as I have ankylosing spondylitis, so it isn't something I have very often.
